It’s well documented that COVID-19 has driven people to categories that provide comfort – and none more so than desserts.

Desserts have gained in importance, with total volume sales up 8% in the U.K last year (Mintel). Meanwhile, U.S sales of ice cream and frozen desserts surged by over 16%.

Creativity is at an all time high within the category - from savory tastes, global flavors and novel ingredients.

Asia is once again in the driving seat, with many new flavors emerging from Japan. You know about matcha and miso. Well, get ready for konatsu, a citrus fruit, and Hokkaido, a rich milky ingredient.
